Are you thinking, “What the heck is a zoodle???” Most people do, so read on!
Zoodles are basically noodles made out of zucchini, and are a great, nutrient packed alternative to traditional pasta that is carb heavy and low nutrient. That is a win/win if you ask me, especially for my Paleo, and/or over 40 friends!
Zoodles, are so easy to make. You can use something as simple as a vegetable peeler to make ribbons of zucchini, or you can get a spiralizer like the one I have…
No matter how you make your zoodles, they will taste great. Even my 16 year old son will eat them! Here is a favorite shrimp over zoodles recipe my family loves. This makes a big batch so cut it in half if you are feeding less than 4 people. Hope you enjoy this one as much as we do.
- 2lbs shrimp, peeled and deveined (I prefer wild caught)
- 3-4 zucchini rinsed and spiraled into zoodles
- 1 large onion, sliced thin
- 2 red bell peppers, sliced into thin strips, and cut in half
- 3 tbs grass fed butter
- 3 tbs olive oil
- 2-4 garlic cloves, depending on your taste
- 1/2 tsp red pepper flakes (we like it to have a kick) and/or
- 1 tsp oregano
- salt and pepper to taste
- parmesan cheese to taste
Over medium heat melt butter and olive oil together. Add onion and red bell pepper, sauté until onion is translucent. Add garlic and sauté making sure heat is low enough so that garlic does not burn and turn brown. Add red pepper flakes and/or oregano and stir. Add in shrimp and cook until just pink on both sides. Push mixture to outside of pan. Add zoodles to center of pan warming them thru for about a minute. Stir everything together and cook for a minute or two and top with parmesan cheese to taste.
Thats it! Now you have a delicious and super nutritious alternative to the usual heavy pasta dish that leaves you over stuffed. You can create so many recipes using zoodles! Let me know what recipes you come up with, I’d love to hear from you!
